- In a large bowl, mix together the flour, salt, yeast and sugar. Stir in the water and mix to a soft dough. Turn onto a lightly floured surface and knead for 10 minutes.
- Divide the dough into eight equal pieces and form into balls. Place on a lightly floured board and cover with oiled cling film and a damp tea towel. Leave for 30-60 minutes until doubled in size.
- Meanwhile pre-heat the oven to 230c/Gas 8. Roll the balls of dough into circles and place on baking sheets which have been lightly dusted with flour. Make dimples in the dough with your finger tips.
- Mix together the olive oil, zatar and lemon juice. Spread over the dough circles. Bake in the oven, in batches, for 8-10 minutes until lightly browned.
