Ingredients

  • 3 pitta breads
  • ½ cos lettuce, shredded
  • 2 tomatoes, diced
  • ½ cucumber, thinly sliced
  • 6 spring onions, thinly sliced
  • 6 radishes, sliced
  • 1 tbsp chopped fresh mint
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh coriander
  • 3 tbsp olive oil
  • juice of ½ lemon
  • 2 tsp Bart Sumac
  • 1 garlic clove, crushed
  • salt & pepper to taste

    1. Slice the pitta breads in half and grill until crisp. When cool, break into pieces.
    2. Place the salad ingredients in a large bowl, add the fresh herbs and toasted bread.
    3. Whisk together the olive oil, lemon juice, sumac, garlic, salt and pepper. Pour over the salad and toss together.
