The curry leaf has a sweet, floral tangy flavour that is aromatic rather than hot. Curry powders are a blend of cumin, coriander and turmeric and have a mix of heat, earthy tones.

Curry is a versatile flavour which works with most meats and fish and depending on the heat levels you enjoy you can mix and match depending on the season or the strength of flavour in the meat. Curry leaves are a more subtle flavour, but not to be forgotten – add into a stewing curry.
