- Place the cider, cinnamon, cloves, bay leaves, cardamom, nutmeg and sugar in a large pan.Heat gently until the sugar has dissolved, then bring almost to simmering point.
- Heat very gently for 10 minutes, taking care not to let the cider boil.
- Stir in the brandy or rum, then pout the cider into glasses.
