  • 2 tsp Bart Ingredients Mint
  • 50 ml white rum
  • 1 tsp caster sugar
  • Lime wedge
  • Caster sugar for dipping
  • Juice of 1 lime
  • Crushed ice
  • Soda water
  • Mint leaves and lime slice, to garnish

    1. Place the Mint, rum and caster sugar in a jug and leave to stand for 10 minutes.
    2. Spread a thin layer of caster sugar on a saucer. Dampen the edge of a chilled glass with a lime wedge and dip the rim into the sugar.
    3. Pour the lime juice into the glass, add the crushed ice and strain the rum through a fine sieve or tea strainer over the top.
    4. Top up with soda water, to taste.
    5. Garnish with mint and the lime slice.
