Ingredients

  • 100g sun dried tomatoes, soaked & roughly chopped
  • 1 tsp dijon mustard
  • 1 tbsp capers, drained
  • 2 tbsp pitted green olives
  • 2 tsp Bart Garlic in Sunflower Oil
  • 1 tsp Bart Basil in Sunflower Oil
  • 2 tsp lemon juice
  • 6 tbsp olive oil
  • salt & pepper
  • slices of lightly toasted crostini, to serve

    1. Place the tomatoes, mustard, capers, olives, garlic, basil, lemon juice and olive oil in a blender. Process to a rough puree. Season with salt and pepper.
    2. Serve at room temperature on toasted crostini.
