- Place the Mint, rum and caster sugar in a jug and leave to stand for 10 minutes.
- Spread a thin layer of caster sugar on a saucer. Dampen the edge of a chilled glass with a lime wedge and dip the rim into the sugar.
- Pour the lime juice into the glass, add the crushed ice and strain the rum through a fine sieve or tea strainer over the top.
- Top up with soda water, to taste.
- Garnish with mint and the lime slice.
